  • Preheat oven to 350°F.
  • In a large mixing bowl cream the butter, brown sugar and granulated sugar until fluffy.
  • Add the eggs and vanilla, beat well.
  • Add the flour, baking powder, salt, cinnamon, cardamom, oats, raisins, and craisins and chopped nuts, mix well.
  • Drop by rounded teaspoon onto ungreased cookie sheet.
  • Bake until lightly brown.
  • Cool on wire rack.
  • Do not over bake.

  1. Absolutely fabulous! I am not a real sweet tooth person, but these appealed to me as the ingredients looked interesting and I LOVE oats! I made ONE change - I felt that with the already sweetened craisins (cranberries) and raisins, that the sugar quantities were a wee bit too much for us, so I used a total of 1 1/2 cups sugar and used ALL light brown sugar - with GREAT success! The addition of the cardamom seeds was AMAZING and took these oatmeal cookies to a HIGHER taste level IMHO! I used toasted walnuts for a more mellow flavour and my yield for these cookies was 36 large ones! I made this for the Photo Recipe Swap, but these will NOW be a firm favourite in our house - so tasty and I might even reduce the sugar a bit more next time to about 1 1/4 cups total! Thanks Vicky!   2. Good Recipe. Worth making again. I made with half butter/half margarine, half rolled oats/half steel cut, reduced the white sugar, added a splash of vanilla liqueur, and didn't use the walnuts, oh and I used ground cardamom and baking powder, not soda. The cookies were a definite hit. The batch certainly didn't last long.
     
  3. I already have an oatmeal cookie of my own posted but since I'm an oatmeal cookie addict I try every recipe I can get my hands on and this one has cardamom which I love! Well, all I can say is that my kids asked after these were all gone when I'm going to make more of those yummy cookies and so here I am baking them for a second day in a row. The changes I made were to leave out the fruit and instead I used chocolate chips. I also left out the nuts and put in a cup of sweetened coconut; it was delicious. O.K. maybe I changed it more than you would have liked but it was great anyway. Thank you!

Hello! I am a resident of WA state, and I must say I love it here.... especially where coffee flows so freely! I live with my SO, Mark, and he has lived here since 2001 (originally from San Diego, CA). We live a quiet life and enjoy just about anything outdoors. I love to travel... sometimes just to pick a spot on the map and make a weekend out of it. Since I have been here, some of my favorite places to visit are Oregon and Washington (Cle Elum, Leavenworth, Spokane, Bonney Lake, Maple Valley, Issaquah, etc). My favorite place in Seattle is Pike Place Market, even though I don't get there often. And, Mt. There was a question posted in one of the forums about who I would love to have for dinner, right now. I answered God, Jesus, my mom, Grandma Lundin, Grandpa Lundin and Aunt Sig. They are my role models in life. Each has molded me into the person I am now. My fondest memories are spending Thanksgiving and Christmas-time at my Grandma's house, and the whole family around. SO MUCH good food! I lived in that small city my whole life and graduated from high school just outside of town. I have a strong restaurant background.. everything from Pizza Hut to a local italian restaurant called Vullo's. It seems, though, I have a passion for machining technology, even though I didn't go to school for that. I grew up with a local manufacturer of machine/tooling systems soldering/wiring circuit bds and assembling whole systems. That wasn't enough for me so, I went to college and obtained my AAS in Electrical Technology. The same company hired me back to work in their service dept as a technician. I had planned to go further to become an electromechanical engineer for the company, but I was laid off. I have been out of it so long, I would probably have to start over from scratch.. .that is the problem with electronics/technology.
