Louise's Sweet N’ Sour Pork

  • Cook meat the night before in hot bacon fat until brown.
  • Drain pineapple (keep syrup).
  • Combine water, brown sugar and vinegar, corn starch, salt, soya sauce and 3/4 to 1 cup of pineapple syrup.
  • Cook until clear and slightly thickened (2 minutes).
  • Add meat, cook covered over low heat, for 1 hour or until tender. Refrigerate 30 minutes.
  • Before serving, heat mixture until hot.
  • Add green peppers, pineapple and onions.
  • Cook for 2 minutes.
  • Serve with hot fluffy rice.
