ingredients
- 5 medium potatoes, pared & thinly sliced
- 2 cups vegetable broth
- 4 slices mock crispy-style imitation bacon (Morningstar Farms brand)
- 1 (300 g) package frozen quorn pieces (the chicken stir fry ones)
- 1 tablespoon butter
- 3 tablespoons flour
- 1⁄2 cup milk
- 1⁄2 cup water
- 1⁄2 teaspoon herbes de provence
- 1⁄4 cup shredded mozzarella cheese
- salt and pepper, to taste
directions
- In medium saucepan, over medium-high heat, heat broth to a boil; reduce heat. Add potatoes; cover and simmer 5 minutes or until fork tender. Drain, reserving broth.
- Prepare bacon strips and chicken pieces according to package directions. Set aside.
- In another saucepan, melt butter. Remove from heat and blend in flour. Gradually add reserved broth, water and milk; cook over medium heat, whisking constantly, until mixture comes to a boil. Reduce heat and add the Herbes de Provence, salt and pepper. Cook until sauce reduces to a spoon-coating consistency. Don’t let it get too thick. Remove from heat and stir in mozzarella cheese until melted.
- In a greased 2 quart baking dish, layer 1/3 each potato-onion mixture, sauce and bacon. Repeat layers twice. Bake at 400 degrees for 35 minutes. Can be served as a side dish or main course.

I made this again last night. I added broccoli this time and did it all the same as last time. Strangely I didnt need to add extra flour this time. I couldnt find the herbs so used a little seasoning in the water/milk mixture. I also added extra mozzarella to the top. I took a photo and added it, as I thought it looked REALLY good!
Everyone loved it! Thanks again! 5 stars!

I wish I could give more stars, this was outstanding! I used sweet potatoes instead of regular potatoes. And the recipe didn't specify anything about the onion other than in the layering directions. I used half an onion, cut into rings and boiled it with the potatoes. The Morningstar bacon added a lot of flavor, I think it would be just as good with or without the Quorn. Thanks Shannon W. for a wonderful dish!

I am a vegetarian (pescetarian) who occasionally indulges in sushi and seafood, so the majority of my recipes reflect my preferences. I always try to offer substitutions in my recipes that can be made for my carnivorous friends.

I believe that vegetarians can make just about ANY meat dish under the sun by making smart substitutions of vegetarian mock meats, tofu, or vegetables. If a dish calls for meat or poultry, I NEVER let that stop me. I can make just about ANYTHING vegetarian...and taste just as good, if not BETTER, than the real thing.
