Low-Cal Oven Fried Chicken Cutlets

"I'm on a mission to slenderize some of my favorite foods. (ok so that I can slenderize myself too!) This is my own adaptation of something I saw on the Food Channel recently with Juan Carlos Cruz."

ingredients

  • 6 chicken breast tenders
  • 1 whole egg
  • 1 egg white
  • 1 tablespoon water
  • 1 cup Italian seasoned breadcrumbs
  • 1 tablespoon locatelli cheese, grated
  • 1 tablespoon fresh parsley, minced
  • nonstick cooking spray

directions

  • Pre-heat oven to 425 degrees.
  • Beat the egg and white together with the water well.
  • Mix well the bread crumbs, cheese, and parsely.
  • Line a cookie sheet with aluminum foil and lightly spray the surface.
  • Dip the chicken into the egg mixture, then dredge into the breadcrumb mixture so that it's well coated.
  • Place on cookie sheet. When all the chicken pieces are coated, lightly spray with the non-stick cooking spray.
  • Bake for about 20 minutes until just cooked through. (these will dry easily so try not to overcook).

  1. Very nice, we liked that it was nice anc crunchy. I used actual chicken cutlets rather than chicken breast tenders, also had to use sharp cheddar cheese.Good recipe, thanks for posting. july 27/09, mmm good, this time i used half chicken breasts whole, turned out lovely and moist. again I used shredded old cheddar, very nice supper thanks!

I LOVE Food~ (I guess don't we all, that's why we're here)I have lots of great recipes under my belt some of my own some stolen, I plan on sharing as much as I can (some of them are just in my head and hard to transcribe into cups, tablespoons...etc) whenever I can find the time, which is at a premium for me. I'm very luck to live within minutes of a major metropolitan area so that ethnic foods are readily available to me. I have two wonderful children whom I've raised to TRY everything before deciding to like it or not... (and try again a few years later just in case!) I just put a new kitchen in my house and have found that a black cooktop is such a pain to keep clean for someone who REALLY cooks, but having a gas stove is such a dream! Admittedly we order our fair share of pizza's because I don't always plan the week and sometimes just dont' have the time to cook between work, and running the kids around. But cooking on the weekends is my pleasure and very relaxing for me. This is such a great place to find unique recipes and foods I would never before have thought to make, but after reading reviews am prompted to try~ Thanks to all the contributors.
