  • Blend the flour, cocoa, baking powder, splenda together in a Pyrex two-cup baking dish.
  • Add water, melted butter and egg and blend together thoroughly with a fork.
  • Cover with plastic wrap and cut a small vent in the top to vent.
  • Microwave on HIGH for 1 minute or until a knife comes out clean.
  • Cool a bit and eat warm with whipped cream.

  1. I used golden flax meal -- same measurement, and added 2 tsp plain yogurt for moisture. This recipe turned out beautifully. For the topping I whipped one cup heavy cream, 1 heaping T cocoa powder and 2 pkts of Splenda with my power stick to a thick, stiff consistancy. Perfect balance to the dense cake and just the right sweetness. The cake cut in half and was perfect for 2 servings. I am already making recipe 263983 South Beach Muffin, which is pretty similar and it turns out great. I imagine "add ins" would work with this recipe, too. Thanks for dessert, Mercy.
     
  2. Mercy, I have to confess I did not believe a cake made with soy flour would taste good at all, but changed my mind as soon as I tried your recipe! I still cannot believe how delicious and soft this cake is! I unmolded the slightly cooled cake on a dish, surrounded it with slices of fresh peach and decorated with whipped cream--heavenly! I wonder what the result would be if I put a square of bitter-sweet chocolate inside the raw dough%u2026 I bet I could fool everybody into believing it's regular molten cake! I'm going to try this trick on my next dinner party.
     
  3. I'm still in shock that you can pull this off - cake in a cup in a minute. Perfect for those with zero impulse control. I'm going to keep playing with this - I used garbanzo bean flour, which is a little less bitter than soy flour and will try the almond four next. Also, I don't think it needs a full minute in my microwave. (I have to tell you, watching this thing rise in the mug in the microwave was pretty ... ummmm ... astonishing.)
     
  4. Good for something in 3 minutes! Better with almond flour than with soy, I just wish it had a little more chocolate flavor.
