  1. Butter a 9X5" loaf pan.
  2. Place almonds in food processor and pulse until finely ground.
  3. In medium bowl, combine ground almonds with 1 1/2 teaspoons sweetener, blending well. Add melted butter and stir until blended. Press almond mixture into bottom of prepared loaf pan.
  4. In medium bowl, stir gelatin into boiling water followed by 3 1/2 tablespoons of sweetener and stir until completely dissolved.
  5. Using a hand-held electric mixer, blend cream cheese into gelatin until smooth and completely combined.
  6. Stir lime zest into mixture and gently fold in whipped topping until completely combined.
  7. Spoon mixture over prepared almond crust. Cover and refrigerate at least 3 hours. Cut into 8 squares and garnish with additional lime zest.
