  • Butter a 9X5" loaf pan.
  • Place almonds in food processor and pulse until finely ground.
  • In medium bowl, combine ground almonds with 1 1/2 teaspoons sweetener, blending well. Add melted butter and stir until blended. Press almond mixture into bottom of prepared loaf pan.
  • In medium bowl, stir gelatin into boiling water followed by 3 1/2 tablespoons of sweetener and stir until completely dissolved.
  • Using a hand-held electric mixer, blend cream cheese into gelatin until smooth and completely combined.
  • Stir lime zest into mixture and gently fold in whipped topping until completely combined.
  • Spoon mixture over prepared almond crust. Cover and refrigerate at least 3 hours. Cut into 8 squares and garnish with additional lime zest.
