Low Carb Egg "pancakes"

- 2 eggs
- 1 teaspoon low-carb maple syrup
- 1⁄2 teaspoon low-carb peanut butter (optional)
- 1 teaspoon maple flavoring
- 1 teaspoon Splenda sugar substitute
directions
- Beat eggs along with Maple flavoring and Splenda.
- Pour mixture into a heated skillet on medium heat.
- Cook just as you would an omlet, letting the egg set on one side completely before turning.
- When egg is completely set, serve onto plate and spread peanut butter (if desired) and syrup over the top.

I am a mother of two. I have a daughter who is nine and a son who is three (will be four in December). My husband is completing his last year of college and I am staying home with my son while everyone else is at school. We just moved back to our hometown and are just getting things organized. I am the cook in the family and am also left to do most of the household cleaning, and well as budget and finance. It all seems to rest on me. I want us to all eat more health foods and I want my kids to experience new foods and discover that vegetables are not gross.
