Low Carb Egg "pancakes"

  • 2 eggs
  • 1 teaspoon low-carb maple syrup
  • 12 teaspoon low-carb peanut butter (optional)
  • 1 teaspoon maple flavoring
  • 1 teaspoon Splenda sugar substitute

  • Beat eggs along with Maple flavoring and Splenda.
  • Pour mixture into a heated skillet on medium heat.
  • Cook just as you would an omlet, letting the egg set on one side completely before turning.
  • When egg is completely set, serve onto plate and spread peanut butter (if desired) and syrup over the top.

I am a mother of two. I have a daughter who is nine and a son who is three (will be four in December). My husband is completing his last year of college and I am staying home with my son while everyone else is at school. We just moved back to our hometown and are just getting things organized. I am the cook in the family and am also left to do most of the household cleaning, and well as budget and finance. It all seems to rest on me. My husband and I have been married four years this past June. I love cooking and I find great satisfaction in making things at home instead of always getting take-out or eating out. I want us to all eat more health foods and I want my kids to experience new foods and discover that vegetables are not gross. Hoping this is the right place to find great recipes to make fast, healthy, tasty food and not cost too much.
