Low Carb Flax Flat Bread

"A good bread replacement when doing a low carb diet. All of the carbohydrate in the flax meal is fiber. Plus flax is super good for you! Great as a sandwich, with jelly, or with some edamame hummus. This is adapted from a recipe found on about.com."

  • Preheat oven to 425.
  • Combine dry ingredients and mix with fork or whisk.
  • Make a well in the center and add wet ingredients.
  • Mix, making sure eggs integrate well.
  • Let sit for five minutes.
  • Spread on greased cookie sheet or silicone mat to desired thickness, I like it to be about 9 x 10 inches.
  • Bake 10-15 minute.

  1. I've made some modification to the original recipe. Replaced salt with ground cinnamon and artificial sweetener to natural stevia!   2. Yum! Great for a healthy bread. I was a bit dubious when I put it into the oven as the dough didn't look like dough, just quite stodgy. I was pleasantly surprised, smells great, tastes great, nice and nutty, great with butter! My only criticism was that it is a little too salty for my taste, I would use half - 3/4 of the salt used in this recipe.
     
  3. This is a delicious bread, low-carb, gluten-free and a good source of dietary fiber. Aside from using it for sandwiches, try making it into pancakes. Just spread a little butter on two pieces, microwave them about 45 seconds until the butter melts, and top with some fresh berries or sugar-free maple syrup. Or make it using dark flaxseed meal and add about 2 Tbsp. of dried onion flakes soaked in 2 Tbsp. of water, 2 Tbsp. of caraway seeds (or less, to taste) and 1/4 cup of grated Parmesan cheese to make an "Almost Onion-Rye Bread" out of it.
     
  4. This is very good. I'm on the 17 day diet, which is pretty much low carb. I can't wait to have a tuna sandwich with this. Next time I think I'll add a little garlic powder and maybe onion powder and no sweetner.   5. Things I did/failed to do that might have affected the result: 1.) I didn't have flax meal, but flaxseeds. I took the chance of grinding them myself, in a small food processor I have. I don't think the end result was as finely-ground or fluffy as meal, and although I think the texture was fine and maybe even preferable, I think I might try it with actual meal in the future to see what happens. 2.) I subbed some of the flax "meal" with chickpea flour, as some suggested already. I'm not sure if the too-salty-bitter taste was due to too much salt, as others have also suggested was the case for them, the taste of baking powder (which for me is very distinct), or undercooked chickpea flour, because . . . 3.) I neglected to get the oven hot enough. I misread the directions in my hungry haste, and only heated to 400 as opposed to 425. Overall, my initial impression wasn't love at first bite, but it definitely fits the nutrition profile I'm seeking these days. Furthermore, slathered with plenty of unsalted butter and dunked in some delicious homemade soup, and I will have no trouble eating this up quick. Really satisfies the craving for bread.

Tweaks

  1. I use 1 packet of Truvia for the sweetening ingredient. I bake it in a 9x13" pan. I quickly pour the batter in and help spread it into the corners evenly before it thickens. I try to always use golden flaxseed meal instead of the brown because it looks more appetizing. I have used dry eggs instead of fresh eggs. I mix the dried eggs in with the flax meal and other dry ingredients and stir with a whisk to be sure there are no clumps of anything. I add the water used to rehydrate the eggs to the water used for the bread. I bought dry eggs just for this and a few other low-carb recipes. They are really handy. If you want a more savory bread, add onion and/or garlic powder. I'm sure minced garlic would be fine. I don't think minced oNion would work as well as onion powder. Some seeds and herbs might give your bread the perfect touch. If you want a sweeter taste, add a second packet of Truvia. I love Kalamata Olive bread that's made by a local bakery and I am going to add pitted, sliced Kalamata olives to the bread. I will drain the slices on a paper towel to avoid increasing the moisture too much. You can dry this bread and use it for salad croutons or crumbs for breading or toppings.
