  1. Peel carrots and onions. Put in food processor until finely shredded. Add garlic. Saute in olive oil until soft. Cool.
  2. Put meat, eggs, milk, ketchup, salt and pepper in food processor and combine. Add cooled vegies and combine.
  3. Pat into 8 x 8 pan. Top with bacon. Cook in 400 degree oven for 45 minutes to 1 1/2 hours depending upon thickness. Meatloaf will shrink away from edges. If bacon hasn't cooked, convection or broil until done.
  4. Put on a rack under a pan and blot with paper towels to remove all possible fat. Let rest for 15 minutes.
  5. Serve plain, with ketchup, or A-1.
