Low Carb Mexi Baked Chicken

"Another personal South Beach Diet friendly favorite of mine. It's flavorful and easy to throw together, bakes in less than 1 hour. I serve this with a side of my Mexican Jumping Beans. For the taco seasoning, I like to make my own (no sugar added; there are plenty of taco seasoning Zaar recipes to choose from, if you would like to make your own."

  • Preheat oven to 375 degrees.
  • Spray a shallow, small baking dish with non-stick spray.
  • Coat chicken lightly with taco seasoning, on both sides; spoon salsa over top of breast.
  • Bake, uncovered, about 45 minutes.
  • Sprinkle cheese on both breasts evenly; bake for another 5 minutes or until cheese is melted through.

  2. I used peach/mango salsa and added a dollop of guacamole before serving. It was great!
     
  3. Such a simple recipe but yet SO GOOD. I sprinkled salt on both sides of the chicken, did 4 chicken breasts. Didn't really measure the seasoning I just kept sticking a 1/2 TBL scooper in the package and seasoned both sides of each chicken (so I'm not sure how much I used, probably more than called for but it was tasty!!) and I used about 1/2 a jar of salsa and I did bake it covered with foil so the chicken wouldn't dry out. I think I might add black beans like another user did and fiesta cheese makes this so yummy!!! We had spanish rice and re fried black beans. Thanks!!!
     
  4. We had this for dinner tonight. Very yummy!!! Simple - low carb 5.1 and can see adding sour cream and guacamole to it next time. We had refried beans with cheese over them as a side dish. Very good meal!!!

  1. We all I enjoyed this. I followed the recipe except that I tripled the recipe for my family. I used my own taco seasoing and mild picante sauce instead of salsa. I baked mine for 40 minutes and then topped with the cheese and cooked another 5 minutes. Very easy to make.

Welcome! I joined this website in 2001, as a new wife and Mom of a 1 y/o and I was 28 yrs old and did not know about cooking. I found this website cause I searched the web and wanted to find a good recipe for carrots! I found that recipe and so much more here over the years. I learned so much from this website and opened up my eyes to other recipes. I now am 46 y/o. I am now divorced and my then 1 y/o son is now a Marine. I have a wonderful man in my life that loves and appreciates my cooking and I thank this site for all of its help. I still come here for recipes.
