- 1 1⁄2 cups unbleached flour
- 1 cup sugar
- 3⁄4 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1 cup applesauce
- 2 egg whites
- 1⁄4 cup vegetable oil
- 1⁄2 teaspoon vanilla extract
- 1⁄2 cup chocolate chips
directions
- Preheat oven to 350.
- In medium bowl, mix together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, combine applesauce, egg whites, oil, and vanilla; beat until blended. Add flour mixture to applesauce mixture and stir just until evenly moistened. Do not overmix.
- Stir in chocolate chips. Spoon batter into 12 oiled or paper lined muffin cups.
- Bake for 25 minutes, or until centers spring back when pressed lightly. Do not overbake! Cool on a wire rack.
