Low Fat Banana Wacky Cake

"Had an old banana laying around, looked up a wacky cake recipe and edited it to the types of food I usually eat. (aka: low fat/healthier) It is pretty gooey, but I may not have cooked it long enough, also a little chewy because of the oatmeal."

  • Stir together dry ingredients.
  • Make three wells in mix.
  • put banana and oil in one well, vinegar in another and vanilla in the third.
  • Pour water over top.
  • Stir.
  • Pour into 8x8 pan.
  • Bake at 375 for around 30 min until springs back when touched or comes out clean when poked w/fork.

  1. This is similar to what we have made for years, called "Crazy Cake", with the addition of oatmeal and banana, which are nice additions! This had a great flavor and was quite moist for being so low in fat. As I was reading the recipe i noticed there was no leavening agent included, so I dug out my Crazy Cake recipe saw that it used baking soda. I added 1 teaspoon of baking soda. I also increased the vinegar to 2 teaspoons.

I am in college at MSU, graduating in May '06. Starting living on my own in an apartment this year, so I love trying out new recipes and learning how to cook different things. Been trying to make all my own food lately, because I am a health freak and processed foods gross me out. Joined the Peace Corps, will be in Eastern Europe for the next couple of years starting in June.
