ingredients
- 1⁄2 cup oatmeal
- 1 cup whole wheat flour
- 1 cup sugar
- 3 tablespoons cocoa powder
- 1 teaspoon vinegar
- 1 1⁄2 teaspoons vanilla
- 1⁄2 teaspoon salt
- 1 cup cold water
- 1 banana, mashed
- 1⁄2 teaspoon vegetable oil
directions
- Stir together dry ingredients.
- Make three wells in mix.
- put banana and oil in one well, vinegar in another and vanilla in the third.
- Pour water over top.
- Stir.
- Pour into 8x8 pan.
- Bake at 375 for around 30 min until springs back when touched or comes out clean when poked w/fork.

This is similar to what we have made for years, called "Crazy Cake", with the addition of oatmeal and banana, which are nice additions! This had a great flavor and was quite moist for being so low in fat. As I was reading the recipe i noticed there was no leavening agent included, so I dug out my Crazy Cake recipe saw that it used baking soda. I added 1 teaspoon of baking soda. I also increased the vinegar to 2 teaspoons.

I am in college at MSU, graduating in May '06. Starting living on my own in an apartment this year, so I love trying out new recipes and learning how to cook different things. Been trying to make all my own food lately, because I am a health freak and processed foods gross me out.
