- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon cinnamon
- 1⁄3 cup brown sugar, packed
- 1 cup wheat bran
- 1 cup all-bran cereal (not flakes)
- 1 egg
- 1 tablespoon molasses
- 1⁄2 teaspoon vanilla
- 1 1⁄4 cups 2% low-fat milk
- 1⁄4 cup water
- 1⁄4 cup plain yogurt
directions
- Heat oven to 400 degrees.
- Mix first six ingredients in a medium bowl.
- Mix the rest of the ingredients together in a larger bowl.
- Add dry ingredients to wet ingredients. Stir but do not overbeat.
- Spoon into non-stick muffin tins (or spray with vegetable oil spray).
- Bake for 16-18 minutes or until a knife comes out clean.
