- 60 g dark chocolate
- 1 tablespoon unsalted butter
- 3 tablespoons prune puree
- 3⁄4 cup caster sugar
- 1 egg
- 1 egg white
- 2 teaspoons vanilla essence
- 1⁄2 cup all-purpose flour
- 2 tablespoons unsweetened cocoa powder
- 1⁄4 teaspoon baking soda
- 1⁄4 teaspoon sea salt
- 50 g cashews (chopped)
directions
- In a small pot over low heat, stir dark chocolate and unsalted butter until melted and let it cool.
- Puree 1/2 cup of pitted prune by adding 3 tbsps of water.
- Sift flour, cocoa powder, baking soda and sea salt together.
- Beat egg, egg white, sugar and vanilla on low speed until the mixture is thick and creamy.
- Stir in melted chocolate and prune puree.
- Stir in dry ingredients and chopped cashews.
- Pour the mixture in a 20 cm baking tray lined with baking paper.
- Bake in a preheated oven at 150ºC for 15-20 minutes.
- Let it cool and serve.
