Low Fat Buffalo Chicken Tenders W/ Blue Cheese Dip

"Using the lean chicken tender reduced the amuont of fat, as does baking the chicken instead of frying. The blue cheese dip is lower in fat and calories, so this is guilt free snacking! Taken from the Heart Healthy cookbook. Note: prep time includes marinate/refrigeration time. Note: After making these many times, I have found that it is much easier to cook them on the George Foreman after marinading. I'm sure pan frying would work as well. Experiment and enjoy!"

  • Preheat oven to 375°F.
  • Combine the hot sauce, paprika and ground pepper in a small bowl; brush on all surfaces of chicken.
  • Place chicken in greased 11 x 7 inch baking pan.
  • Cover; marinate in refrigerator for 30 minutes.
  • Bake, uncovered, about 15 minutes or until chicken is no longer pink in the center.
  • Combine blue cheese dressing, sour cream and blue cheese in small serving bowl.
  • Serve chicken with dip and celery/carrot sticks.

  1. This is a great, quick, easy recipe. I added BBQ sauce to the marinade but it isn't necessary. In fact, it lengthened the baking time because it was too moist. It was still very good, though, esp. with the bleu cheese dip! Great recipe!
     
  2. These were great... healthy, tasty and easy. I used the Forman Grill method. DH loved them. They were a bit too spicy for me. I will try a buffalo sauce or a toned down version of this one next time. We will be making these again and again. This recipe is going in my Zaar Stars!
     
  3. I really loved this, and so did my husband! The one thing I did differently was to use a buffalo sauce marinade rather than the louisiana hot sauce, but everything was followed exactly. A simple, delicious recipe that I will keep around. Thanks!
     
  4. Made these for the Super Bowl this year, and found them a little dry. Used a high quality free-range chicken tender, so maybe it was pilot error and I over cooked them even though I watched them carefully. The spice level was just right and I loved the dip. I'll use the dip again in the future.

I am lucky enough to be "living the good life". I have the most wonderful husband and two terrific teenage daughters. We reside in Central Pennsylvania where we have the luck of having four full seasons. Between my husband and myself, we have two full time jobs, three businesses and one part time job. We are very busy, but try to take it easy when we can and enjoy the wonderful life we have been blessed with. Future plans include moving to an inherited 45 acre farm in a beautiful valley surrounded by mountains. This will occur if and when our DD's leave the nest. We love to travel and have enjoyed seeing all of North America and a large portion of the United States together. Since discovering Zaar, I have to say my life has become more flavorful! I have learned that it's easier than I thought to have an organized, well-planned and yet creative and fun kitchen! I love the features of Zaar, but especially enjoy the people.
