Low Fat Chocolate Oatmeal Muffins

  • Soak the oats in milk for about one hour.
  • Preheat the oven to 400.
  • Spray the muffin pan with cooking spray.
  • Combine the oat mixture with the applesauce and egg whites, and mix until combined. In a separate bowl, whisk the dry ingredients together. Add the wet ingredients to the dry mix until just combined. Add the chocolate chips. Do not over-mix of the muffins will be tough. Spoon the mixture into the muffin pan, forming a total of 12 muffins.
  • Bake for 20-25 minutes, or until done. Remove from pan and enjoy.

  1. Overall these were pretty good but they had a bit of a funny aftertaste that I didn't enjoy. Also the oats were still very evident which I didn't mind but my kids didn't enjoy at all. These muffins really don't rise so I recommend filling them to the top. I didn't read all the reviews first, filled my muffin tins 2/3 of the way full as recommended with most other recipes and threw away some extra batter. I was pretty disappointed when my muffins were little and flat.

I followed the recipe other then I used one egg instead of the two egg whites and I used white chocolate chips as I didn't think I would like chocolate chips in these (personal preference). I also used 5 tablespoons of cocoa and that was good for us. I cooked mine for 20 minutes. There are solid muffins but mine did raise some. They are so yummy!
     
  3. Good muffins, especially for being lower fat, although still a bit caloric. Made a good breakfast. I tried to add some peanuts to half the batter thinking it would be a good addition, but didn't really turn out very well. As other reviewers mentioned, didn't rise very much. But they were tasty. Thanks for posting!
     
  4. These are crazy wonderful! Followed recipe except used 1 egg (instead of 2 egg whites) and semi-sweet chocolate chips (instead of dark). The muffins were not very attractive (completely flat), but the taste was downright decadent.
     
  5. OMG - these muffins are just wonderful and do not taste low fat AT ALL. I - or rather my 7 yo daughter - made exactly as written. We added the full cup of chocolate chips, but you could easily get away with adding 1/2 cup. Now I just have to try and stay away from eating them all, which would make them less low fat ;). Made for PRMR

I am the mother of two beautiful boys. I love to bake and cook which has helped me to become very overweight. I have lost 50 pounds this past year and have been learning to cook "lighter". We still enjoy many of the same dishes we used to. However, I have learned portion control and how to make suttle changes to my recipes that don't affect the flavor.
