Low Fat Garlic Chicken Pasta

directions

  • Cook pasta until done, drain, return to pan.
  • Stir in spinach, tomatoes and 2t oil.
  • Cover to keep warm.
  • While pasta is cooking: in 12 inch saucepan, heat remaing 1t oil over med heat.
  • Add onion, cook and stir 1 minute.
  • Add chicken, and garlic.
  • Cook and stir until chicken is done.
  • Stir in chicken broth, salt, and pepper.
  • cook 2 minutes.
  • Remove from heat, stir in parsley and butter.
  • Add chicken mixture to pasta mixture in saucepan,
  • Toss to mix.

  1. We loved this! I used grape tomatoes, doubled the garlic and added 8 ounces of fresh mushrooms to the saute process. I totally forgot to add the parsley and butter and loved it without it. Will definitely make this again. I also added some crushed red peppers to the saute process.

  3. We liked this very much, but I did add a little more garlic and combined chicken and shrimp, also topped with Parmesan cheese. I will definitely be making this again.
     
  4. We really enjoyed this for supper this evening. I used about 1 tbsp of Montreal Chicken Seasoning in with the chicken while I was cooking it. I also opted to put in about 1 tbsp of lemon juice along with the chicken broth and to top the whole thing with a little freshly grated parmesan. The only thing else I'd do differently is to put a couple more garlic cloves in next time. I'm not a whole wheat type of gal, but I made some whole wheat spaghetti along with white flour spaghetti. In this recipe I couldn't even tell that some of the pasta was whole wheat. I successfully snuck wholesome spaghetti into my meal without my knowing it. heheh Thanks so much for this recipe. It's a keeper.
     
  5. OMG! This is so good! DH loved the tomatoes and I enjoyed the spinach. DH made me promise to make this again. The only change I made was to use shrimp. I did cut the recipe in half and now wish I hadn't based on Deb Petrill's review. Love the colorfulness of this dish. This is going in my top 2009 favorite cook book. Made for Spring PAC 2009. :)
