- 1 3⁄4 cups white flour
- 1⁄2 cup whole wheat flour
- 3⁄4 cup brown sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 cup buttermilk
- 1 1⁄4 cups unsweetened applesauce or 1 1/4 cups pumpkin puree
- 1 egg
- 1 teaspoon oil
- 1 teaspoon lemon extract
- 1 tablespoon lemon zest
- 1 1⁄2 cups fresh blueberries
directions
- Mix dry, mix wet. Add wet to dry til moistened. Fold in berries.
- Scoop into muffin pan.
- Bake at 400 for 25 minutes.
