  • Preheat oven to 450 degrees and grease a loaf pan.
  • Combine cornmeal, wheat flour, sugar, and baking powder.
  • Add wet ingredients to dry ingredients and mix well.
  • Spoon/pour batter into loaf pan.
  • Bake for 15 minutes.

  1. (Prepared for the Spring 2009 Pick-A-Chef) I would definitely call it a cornbread more than a quick bread. Either way, everyone liked it! We used nonfat yogurt as the liquid in the recipe, so the only fat in it comes from the eggs, and I used Sucralose instead of sugar, but don't think it changed the texture or flavor at all. Definitely a winner! I think next time, just for fun, I might try replacing some of the corn meal with a little muesli pulverized in the blender. It's been a lot of fun trying Raichka's thoughtful, healthy recipes. I'm so glad that she joined the 'Zaar and shared them! Thanks, Raichka! :D ohbother
