"Sometimes, we foodies need to watch our weight! Today was our first warm day after a long hard winter and my hubby requested potato salad. I came up with this healthy version and it was delicious! It didn't feel low fat at all!"

  • Boil water and add potatoes and eggs while the water is cold.
  • Mix yogurt, mayonnaise, mustard, salt and pepper.
  • Chop celery and green peppers finely.
  • Peel eggs under cold water and mash.
  • salt and pepper to taste.
  • Blend all the ingredients together and chill.
