Low Fat Soy Banana Bread

"I altered this recipe from one I had at home by using soy flour and splenda. Soy flour is high in protein & lower in carbs. Depending on the kind you use, it can be higher in fat. You may need to add a bit more applesauce if you use the low fat soy flour as it is chalkier & will absorb alot of your moisture."

  • Blend splenda & apple sauce. Combine with mashed bananas & dry ingredients only until moistened. Scoop mixture into a greased loaf pan & bake 35 - 45 minutes at 350F until toothpick inserted comes out clean.
  • ***This is really good served with natural peanut butter on a slice.***.

I live in Alberta, Canada & am a stay at home mom. I love to cook & often experiment. I like to try new recipes, as there are so many out there to just limit yourself to a few favorites. People often ask me if they are being guniea pigs with a new recipe, or has it been tried before. Usually it is a new one! Alot of the time I use the recipe as a guide line & add my own twist.
