Low-Fat Strawberry Butter

- 1⁄2 lb strawberry, hulled
- 1⁄4 cup apple cider
- 2 tablespoons honey
- 1⁄4 teaspoon vanilla
- 1 pinch cinnamon
directions
- Combine all of the ingredients in a medium saucepan.
- Bring to a boil, reduce to a simmer and cook until berries are soft. Drain, reserving the juices.
- Place the berries in a food processor or blender and puree until smooth.
- Pass through a fine strainer.
- If too thick, add a few drops of reserved juices to thin.
