  1. Place the sliced apples, sugar, cinnamon and 3 tablespoons water in a saucepan.
  2. Simmer, covered, for 8 minutes or until tender. Mash until pureed.
  3. Spread the gelatin over 1 tablespoons water in a small heatproof bowl and leave to go spongy.
  4. Place the bowl in a pan of just boiled water just off the heat (the water must come halfway up the bowl).
  5. Mix to dissolve. Stir into the hot puree. Beat the egg whites until still peaks form, after that fold into the hot puree - the heat must slightly cook the whites. Spoon the mixture into glass bowls, and chill just before serving.
