- 1 lb ground turkey
- 2 eggs
- 1 cup quick oats
- 1 -2 tablespoon dried onion flakes
- 1⁄2 - 1 teaspoon dried oregano
- 1⁄2 teaspoon basil
- 1⁄2 teaspoon garlic powder
- 1 quart no-salt-added chicken broth
- water
- 1 (6 ounce) can no-added-salt tomato paste
- 1 cup water
- 1 tablespoon evaporated cane juice
- 1 -2 tablespoon grated parmesan cheese
- 1 teaspoon oregano
- 1 teaspoon onion powder
- 1⁄2 teaspoon garlic powder
- 1 pinch dried parsley
- 1 teaspoon dried basil
directions
- Process oatmeal until coarse powder (like dried breadcrumbs).
- Remove from processor.
- Place turkey, eggs, onion, spices and ground oatmeal into processor, and with metal blade, process until blended.
- Mixture should be firm enough to roll into balls.
- In a large saucepan, bring broth to simmer. Add water as needed to accommodate all meatballs.
- Roll meat into small balls (1 inch in diameter) and drop into broth, and cook for 10 minutes or until done.
- For sauce, mix tomato paste and water with a whisk until blended.
- Add all other ingredients and mix.
- Heat through, and serve with meatballs and pasta.
