- 1 lb lean ground chicken
- 1 cup onion, chopped
- 2 garlic cloves, chopped
- 2 teaspoons oregano, crushed
- 2 (10 ounce) cans Healthy Request condensed tomato soup
- 1⁄2 cup dry white wine
- 2 teaspoons wine vinegar
- 1⁄2 lb lasagna noodle
- 1 pint fat-free cottage cheese
- 8 ounces part-skim mozzarella cheese, grated
directions
- Brown beef, add onion, garlic and oregano. Season with salt and pepper. Cook until onion is done. Add soup, wine, and vinegar. Simmer 30 minutes. Stir now and then.
- Cook noodles according to the package.
- In a 9x13 baking dish, put a small amount of sauce in the bottom. Arrange 3 alternate layers of noodles, ricotta cheese, meat sauce, and noodles. Sprinkle with Parmesan cheese.
- Bake at 350°F for 30 minutes.
- Let stand 15 minutes before serving.
