Lower Fat Raisin Bran Muffins

ingredients
- 2 1⁄2 cups Raisin Bran cereal
- 1 cup unsweetened applesauce
- 1 egg
- 1⁄4 cup water
- 1 cup whole wheat flour
- 2⁄3 cup packed brown sugar
- 1 tablespoon baking powder
- 1 1⁄2 teaspoons ground cinnamon
directions
- Preheate oven to 400°F
- Spray 12 (2.5 inch) muffin cups with nonstick spray or use paper muffin cups.
- In a large bowl, stir together cereal, applesauce, egg, and water.
- Let stand 5 minutes, then stir to break up cereal.
- Add remaining ingredients; stir to combine.
- Divide evenly among muffin cups.
- Bake 15-20 minutes.
- Cool slightly, and remove from muffin cups.

These are great - My husband is losing weight and can’t eat his usual sleeve of Oreos- these hit the spot. Tweaks: I used regular rather than whole wheat flour I used half applesauce & half grated carrots (because I ran out of applesauce) AND used truvia brown sugar I always keep them around because they’re the perfect little something (nice with butter or cream cheese if you’re not counting calories)
