Macadamia Nut Cookies

  • Combine the flour, baking soad and salt.
  • In a large bowl, cream the vegetable shortening and two sugars. Beat in the eggs one at a time, beating well after each addition. Beat in the vanilla extract and lemon juice. Gradually blend in the dry ingredients. Fold in the macadamia nuts and the oats. Cover and chill for 4 hours.
  • Preheat oven to 325 degrees. Lightly grease 2 baking sheets.
  • Drop the dough by spoonfuls 1-2 inches apart onto the prepared baking sheets.
  • Bake for 15 to 18 minutes, untillightly colored. Cool.

  1. Loved these cookies! I used all butter in the 1/2 recipe I made, so mine were a bit thinner, but no matter, still tasty! I baked approx. 1/2 of the 1/2 batch I mixed up and ended with 24, so I should get at least as many out of the ones still in the fridge. I also appreciate a cookie that makes a pretty large batch, as there are always willing 'helpers', for sampling, etc! Thanks for sharing, Maryland Jim!

  3. Ten stars - these were incredible! I only had ingredients for 1/4 of the recipe, and they were all gone before I could even take a photo. I used gluten free all purpose flour and rolled millet to make them gluten free for the Pacific Islands Challenge of the Gluten Free Forum. Didn't have to change any proportions, the recipe could be made gluten free 1:1 and nobody would guess the cookies were gluten free. Thanks for posting this winner, I'll make them again as soon as I can get unsalted macadamias again!<br/>Made for ZWT 7.
     
  4. Yummy, yummy, yummy! Made these for tonight's dessert, and they were eaten in no time. I did throw in some white chocolate chips because of a request from kids....turned out delicious. I'll make these again! Thanks for sharing.
     
  5. These are absolutly wonderful. I baked a batch while the guys were moving furniture for me and there wasn't a single cookie left. They all enjoyed them immensely. Thanks Jim and congrats on your 2009 Football win for Week 1.
