Macaroni Goodness

"I let my husband name this dish. Of all the things I cook he says this is one of his favorites. I certainly don't mind making it because it's so good and so easy. I guess I can stop trying to be "gourmet" if this is what he really wants to eat. :-) This is good comfort food and is easy for a quick weeknight meal. The quantities listed below are approximate since I just eyeball most of the stuff. If I don't have the family size box of mac and cheese on hand I just use 2 regular boxes. I also like to use the frozen veggies that you can microwave right in the bag."

  • 1 (14 1/2 ounce) box Kraft macaroni and cheese (Family size)
  • 12 medium onion, chopped
  • 2 stalks celery, chopped
  • 10 tablespoons butter
  • 12 cup milk
  • 1 garlic clove, chopped
  • 1 tablespoon grill seasoning
  • 1 lb turkey kielbasa
  • 1 (12 ounce) bag frozen broccoli carrots cauliflower mix
  • 1 cup shredded cheddar cheese
  • 12 cup breadcrumbs

directions

  • Prepare mac and cheese as directed on box, adding additional shredded cheese along with packaged cheese mix.
  • Steam veggies in microwave.
  • Saute onions, garlic, celery, keilbasa, and grill seasoning until onions and celery are tender.
  • Combine all ingredients in greased 13x9 baking dish.
  • Melt 2 Tbsp butter and combine with bread crumbs.
  • Top casserole with buttered bread crumbs.
  • Bake at 425 for 15 minutes or until bread crumbs begin to brown.

  1. Yummy, and I mean YUMMY, a little bit dry but the flavor is amazing. It was probably because I cooked the mac'n'cheese the lofat way, but it was still really yummy.

I live in beautiful sunny San Diego with my husband and two wonderful daughters who are 13 (yikes) and 3. I've always cooked but for some reason never really enjoyed it until a few years ago. I'm not sure what changed but now I love it. I'm addicted to this website and The Food Network is always on my tv. My baby loves to "cook" with me and is always by my side in the kitchen. :-) I enjoy finding new recipes and testing them out on the family. My husband likes just about everything except beans, but the kids are sometimes a bit harder to please. In the summer I like to make as much outside on the grill as possible and once winter rolls around I do a lot of baking and love to make soups.
