“This is one of the best macaroni salads I've ever made. I must confess, this recipe calls for 4 cups of mayonnaise, and I made this recipe with 1 cup of mayonnaise and found it deliciously creamy. I also threw in some green onion and a little colby jack cheese. I made sure I used the celery leaves as well as the celery, but this recipe is flexible.   1. Bring a pot of lightly salted water to a boil.
  2. Add macaroni and cook for 8 to 10 minutes or until tender. Drain and set aside to cool.
  3. In a large bowl, stir together the eggs, celery, and pepper.
  4. In a small bowl, stir together the mayonnaise, mustard, pepper, salt, and onion powder.
  5. Combine in the bowl with the eggs and vegetables and stir in macaroni until well blended.
  6. Cover and chill for at least 1 hour before serving.
