Macaroni Salad

"This is one of the best macaroni salads I've ever made. I must confess, this recipe calls for 4 cups of mayonnaise, and I made this recipe with 1 cup of mayonnaise and found it deliciously creamy. I also threw in some green onion and a little colby jack cheese. I made sure I used the celery leaves as well as the celery, but this recipe is flexible.   • Bring a pot of lightly salted water to a boil.
  • Add macaroni and cook for 8 to 10 minutes or until tender. Drain and set aside to cool.
  • In a large bowl, stir together the eggs, celery, and pepper.
  • In a small bowl, stir together the mayonnaise, mustard, pepper, salt, and onion powder.
  • Combine in the bowl with the eggs and vegetables and stir in macaroni until well blended.
  • Cover and chill for at least 1 hour before serving.
