  5. Macaroni Salad Recipe - Evelyn Athens. I changed the number of servings on recipe from 4 to 8 but when I go to print the recipe it reverts back to 4 servings. It will not allow me to change from 4 to 8 servings on the printer friendly version.

  2. LOVE LOVE LOVE THIS salad! Not too much mayonnaise, lovely crunchy veggies and the dressing is perfect. It's even better the next day. The first time I made this I ate it for lunch for 3 straight days. Never got tired of it. Made it again tonight for tomorrow's company potluck so decided to give a thumbs up to the poster while I was here. Thanks for what has turned out to be my favorite macaroni salad and I am a huge macaroni salad fan.
     
  3. perfect no nonsense macaroni salad recipe...I've made it twice now - each time doubling it since I had potlucks each time...one for them, one for us. today I added leftover ham - also nice (what isn't good with ham added? :)). I like that it has green onion and not regular. makes the whole thing just great and very hometown summery. Thanks for posting!

  5. This was a very good recipe for your basic macaroni salad. The only change I made was that I added in a few dashes of garlic powder. I really enjoyed the crunch of the veggies in this salad. I also loved that this did not have hard boiled eggs in it as well. I think that you could easily use this as a base recipe and add in anything else you might enjoy. Thanks for posting.

  2. Pickle juice for vinegar. Greek yogurt for part of the mayo. Added tuna.
     
  3. I used roasted red peppers and added matchstick carrots.
     
  4. next time, less salt. added garlic powder, pickle juice, orange pepper instead of green and canned chicken crumbled, although it was great before the chicken too.
     
  5. THIS WAS SOOOO YUMMY. i didn't use as many veggies...personal preference and i subbed dill pickle juice for the vinegar (was getting ready to toss an empty jar) ...very good. Just an fyi, this made great potato salad dressing. I highly recoomend you try it!

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
