Dressing
- 1 cup mayonnaise
- 2 tablespoons vinegar
- 1 tablespoon mustard
- 1 teaspoon sugar
- 1 teaspoon salt
- 1⁄4 teaspoon pepper
- 1⁄2 lb macaroni, cooked and drained
- 1 cup sliced celery
- 1⁄2 cup chopped green pepper
- 1⁄2 cup chopped red pepper
- 1⁄2 cup chopped green onion
directions
- Combine dressing ingredients.
- Stir into remaining ingredients.
- Cover and chill.

LOVE LOVE LOVE THIS salad! Not too much mayonnaise, lovely crunchy veggies and the dressing is perfect. It's even better the next day. The first time I made this I ate it for lunch for 3 straight days. Never got tired of it. Made it again tonight for tomorrow's company potluck so decided to give a thumbs up to the poster while I was here. Thanks for what has turned out to be my favorite macaroni salad and I am a huge macaroni salad fan.

perfect no nonsense macaroni salad recipe...I've made it twice now - each time doubling it since I had potlucks each time...one for them, one for us. today I added leftover ham - also nice (what isn't good with ham added? :)). I like that it has green onion and not regular. makes the whole thing just great and very hometown summery. Thanks for posting!

This was a very good recipe for your basic macaroni salad. The only change I made was that I added in a few dashes of garlic powder. I really enjoyed the crunch of the veggies in this salad. I also loved that this did not have hard boiled eggs in it as well. I think that you could easily use this as a base recipe and add in anything else you might enjoy. Thanks for posting.

OK, here goes. I live in Athens, Greece. I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages!
I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure.
So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call.
What did I do wrong?
Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths.
I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time.
