Macedonian Vegetable Soup

- 1 quart fresh okra
- 2 cups diced celery
- 1 diced green bell pepper
- 1 large onion, diced
- 1⁄2 cup butter (4 oz)
- 1 cup diced tomato
- 1 teaspoon paprika
- 1 teaspoon salt
- 1⁄2 teaspoon black pepper
- 6 cups boiling water
directions
- Cut the stems from the okra and slice.
- Melt the butter in a pot and saute the okra, celery and bell pepper and onion until soft.
- Add the tomatoes,paprika, black pepper and salt and stir well.
- Add the boiling water and simmer for about 1 hour, until the vegetables are all tender.
- Cooked left over chicken or other meat can be added to this soup.

I made this a couple of days ago and simply love it. Like most all soups and stews this tastes best 1-2 days after being made. The change up of veggies from the standard North American veggie soup was a true treat. Had to use frozen okra (never seen fresh where I live in Canada) but everything else was fresh and on hand. It's a treat and I've printed it to keep in my personal keepers cookbook. If you would like to try something a but different and delicious give this one a shot. :D

My screen name is a diminutive in Lithuanian for bread, so you won't be suprised to learn that I love to bake bread. In recent years I have been baking a lot of sourdough breads and have several starters sitting in my refrigerator. But I like to cook a lot of other things, as well, especially from various cultures. The cat wishes I would concentrate on meat and fish... I joined a few years ago but started posting recipes and participating in forums just recently - I wish I had done so earlier.
