  • In large pot, boil potatoes in water 10 minutes. Drain and set aside. In large heavy pot, sauté bacon, onion and celery over medium-high heat until celery is tender, about 5 minutes.
  • Remove mixture from pot, drain bacon grease and return mixture to pot. Add milk, water, base, salt and pepper. Cook over medium-high heat until mixture is very hot, about 8 minutes, stirring often. Do not let mixture boil.
  • In small, heavy saucepan melt margarine. Add flour and mix well. Cook over medium-low heat until mixture bubbles, stirring 2 to 3 minutes to make a roux. While constantly stirring soup, add roux slowly until soup is thick and creamy, about 4 minutes.
  • Stir in parsley, reserved potatoes, and cream. Garnish with cheese, bacon bits, onions or all three.
  • Serve hot.

  1. Wonderful recipe. I used silk milk ( which may not scorch as easy) and dimmed my serving size down . You might want to Brown the bacon first before adding it to the vegetables. My recipe without salt ~ 4-6servings -1 1/2 lbs quartered baby red potatoes .- 2 cups of water -1 whole medium onion (diced) 2tbsp chicken base (I used Orrington Farms with no msg) 1tsp black pepper -1 tsp garlic Powder 1tsp onion powder( helps take place of the salt) 6tbsp wheat flour - 1 tsp parsley -2 celery stalks 1/4 cup of bacon finely diced into strips .
     
  2. Everyone loves this soup and asks me for the recipe. It's so good. I don't add the extra salt because otherwise its a bit salty for my taste. I'd recommend leaving it out and adding to taste at the end.
     
  3. This is delicious, rich flavored. I didn't have parsley but used dried cilantro and I used Sysco chicken base but this is an excellent recipe! I will definetly make again!
     
  4. I love this soup. I made a vat of it and freeze it. The only problem I have is I keep forgetting how long it takes to cook the celery and onion. Everyone loves it. Would not change a thing!

  5. never leave salt out...brings out the flavors of everything else! Get a beef broth that is low or no sodium...that's why it's so salty.

  1. For a true baked potato soup you actually bake russet potatoes. You then prepare a white sauce based on how much soup you decide to prepare. Then you add the inside of the potato and mash it into small particles (close to mashed) and add it with the bacon,green onion(fresh chives) and cheddar cheese and add seasonings according to your likes and slowing simmer it while stirring. It goes down so smoothly and is awesome
     
  2. Since the bacon will never really crisp in the liquid, I use a pound of diced ham in place of the bacon. Then I fry up a pound of bacon in the cast iron and use it as a garnish. I have made this about 30 times in the last 2 years. It is amazing! Especially with cornbread!

I am a housewife, I love to cook and experiment with different spices and flavors, there are not many recipe ideas I will not try. EXCEPT! anything that is extremely HOT and SPICY, I have a allot of family members living here and most of us spend the holidays together.We all Love to eat and look forward to the different AND the traditional recipes on the Holidays. My pet peeve...HUM it makes me crazy when someone cooks and leaves the mess pile up, It's easier to clean as you go, that way when the food is done you can actually sit down and enjoy it. I am very passionate about and being apart of the fight to prevent animal cruelty, and helping to educate people about what happens to Children or Pets left in vehicles on very hot or very cold days, also Pets left in extreme elements outside without the proper necessities. I believe that anyone that purposely harms or torturers a child or a animal is a Coward!
