Mae's Turkey Lasagna

"This is a modified recipe for vegetable lasagna that we added meat to. Since we're "empty-nesters", I usually make 2 smaller pans and freeze one for later."

  • Coat a large pan with cooking spray.
  • Crumble turkey breast, add mushrooms, carrots, and onions, and cook over medium heat until turkey is cooked through.
  • Add garlic, oregano, basil, salt, pepper, pepper flakes, tomato sauce, tomato paste, and canned tomatoes.
  • After it starts simmering, add spinach.
  • Cover and simmer for 20 minutes.
  • Combine cream cheese, cottage cheese & lemon juice.
  • Place 3 lasagna noodles on bottom of 9x13 inch baking dish.
  • Spread 1/3 of cottage cheese mixture over the noodles.
  • Spread 1/3 meat mixture over that.
  • Top with 1/3 of the mozzarella cheese.
  • Repeat layers twice.
  • Top with parmesan cheese.
  • Bake at 350 degrees for 45 minutes.

  1. This lasagna was WONDERFUL! It had so many fresh ingredients and the cottage cheese, cream cheese, lemon mixture really did the job. I used fresh basil, chopped but otherwise followed the recipe. My family loved the kick it had - we will have this again and again!
