  • Preheat oven to 350 degrees.
  • Cream eggs, sugar and butter together.
  • Add mashed bananas (I usually just put in a banana and a half in the mixer with the eggs/butter/sugar, and it gets mashed up pretty well).
  • Add flour, soda and salt and mix.
  • Add chopped figs.
  • Add the rest of the ingredients (I usually just add them whole and the mixer kind of bashes them up to the right size, just don't overmix because you want some pieces to still be recognizable.).
  • Pour in greased loaf pan and bake at 350 degrees for an 1 1/4 hours.
  • If using mini-loaf pans start checking after 45 minutes.
  • Toothpick inserted should come out clean.

  1. Everyone in the family thought this was going to be like fruitcake. They moaned and groaned about it. Despite their squaking, I made it anyway! What a delightful bread! I followed the recipe to a T except that I did not add figs. It is fab right out of the oven and I know it will be even better in a day or two. I received apologies this afternoon as they devoured their slices. I made this in a Pampered Chef mini loaf pan with good results. Baked about 45 minutes. I bet this will become a new tradition around the holidays. Your Aunt Kathy is a genius! KCShell
     
  2. Great bread to make during the Christmas Holidays. I always make this instead of fruitcake as my family prefers it. The only difference in my recipe is that I use dates instead of figs.

I have an adorable 7-month-old son, Mason, he is the light of my life. I am usually typing with one hand (holding him with the other) so please ignore my typos. I work as a microbiologist for a local brewery. I love my job! In addition to micro, I am a professionally trained beer taster. I worked my way through college as a bartender, so I also have an appreciation of wine and spirits in moderation. I wish I knew more about wine, I pretty much just know what I like (a red, not usually as dry as a Cabernet, my favorites are Pinot Noir and Merlot). I worked at Lonz Winery one summer many years ago, I learned a little about how wine is made (although they didn’t make it there, it is a historical winery, they wanted up to know about it). Also, there are many similarities in how wine and beer are made, since both are products of fermentation, and I know a fair amount about that ;-) I have been cooking since I was about 12, and I really love it. Some of my other interests and hobbies are photography, scrap booking, computers/the internet (obviously), and making soap the old-fashioned way (with lye and fats/oils). I have also been known to make a mean home brew. I have been kicking around the idea of making cheese at home too.
