Make-A-Meal-Of-It Meatloaf

"From a cookbook for beginners that I was going to throw out, Ha! I pulled out a few recipes that sounded worth saving now that I'm past toast and boiling water! This was different sounding with veggies around the mound of meatloaf. The book states that you might want to try layering 2 strips of uncooked bacon across the top of the meat loaf before you cook it as a variation. Goes well with tossed salad or cole slaw."

  1. This is a very good meat loaf. I did sub beef broth for the milk. {out of milk} I put in whole carrots, cut potatoes in half and threw in a few onions.and poured the rest of the broth over. I never thought about doing this with meat loaf. What a easy dinner that every one enjoyed. Thanks, Oolala
