  • Mix together flour, cocoa, soda, and salt; stir to blend.
  • Mix in sugar.
  • Cut the shortening into the dry ingredients until the mixture looks crumbly.
  • Label and store in a sealed plastic bag at room temperature. Makes 1 package of mix.
  • Each package makes two 8 or 9 inch layers or one 9 x 13 x 2 inch rectangle.
  • TO USE:

  • Pour 1 package of mix into a mixing bowl.
  • Add 1 1/4 cups milk and 1 teaspoon vanilla or orange extract.
  • Using an electric mixer, beat at a slow to medium speed for 2 minutes. Scrape the sides of the bowl frequently.
  • Add 2 eggs; beat 1 minute more.
  • Grease and dust with flour your choice of pan(s).
  • Spread batter evenly in pans.
  • Bake round cake pans at 350 degrees F. for about 30 minutes or until a toothpick inserted in the center comes out clean.
  • Bake the 9 x 13 inch pan for 30 to 35 minutes or until a toothpick comes out clean.
  • Cool cakes in their pans for 10 minutes before turning out onto racks.
  • CHOCOLATE CUPCAKES: Pour cake batter into greased cupcake tins or tins lined with paper baking cups; fill 1/2 to 2/3 full. Bake at 350 degrees F. for 20 to 25 minutes or until a toothpick comes out clean. Makes about 2 dozen.

  1. I am really happy to find this as I am quite sensitive to the flavor of the preservatives in boxed mixes-- so I can sub this in recipes that call for a box mix as one of the ingredients.
     
  2. This wasn't anything like a boxed cake mix. Had the taste and texture of sweet cornbread and made my cupcakes have a sticky hard outer crust. I'm looking for something that is as fluffy and moist and delicious as a boxed cake mix that I can make myself. This wasn't it. The batter itself didn't even smell that good. I've been looking for a cake mix recipe for a very long time and consider myself a seasoned baker (haha cooking pun). I haven't found a recipe that fits the criteria yet.
     
  3. What a great idea! My only "wish" is that this was for like 5 or 6 cakes (divvied out into individual packets)...time-wise that would be the best option (for me anyway!). I haven't made the actual cake yet, but the mix goes together easily and has a very nice smell and consistency. Next time a recipe calls for a cake mix--I'll be RIGHT ON IT!!! I NEVER buy cake mixes, so this is right up my alley!
     
  4. I tried this just as cake, and will give it a go as a replacement for cake mix in another recipe. As cake alone the chocolate flavor was fairly light and I thought it was a little dry, but this may have been due to my reducing the size of the recipe. With quarter recipe I got 5 nice sized cupcakes that baked in 20 minutes.
     
  5. As good as a store bought cake mix. I am going to try this again using powdered milk and powdered vanilla.

The first time I ever set foot on California soil (or anywhere in the West, for that matter) was the day I moved here. I experienced a form of culture/environment shock for about a year&nbsp;- even the air is different out here! For the first year, I would look at the roads and driveways that wind steeply up and down the foothills and think, Man, how does anyone drive on those in the winter? Then I would remember&nbsp;- they do it the same way they do in the summer&nbsp;- with their windows down, wearing shorts and flip-flops. I love the fact that we are near a large city, near the ocean, near the desert, near the mountains&nbsp;- what more could I ask for? And yes, even though I swore it wouldn't happen to me after living for more than 40 years in places with many weather extremes&nbsp;- I now get chilly when the temperature dips below 70 and can barely bring myself to go outdoors if it's raining. However, I do NOT wear a parka and mittens when it's 65 degrees&nbsp;- a sweatshirt or light jacket will do. <br /><br />My husband and I met while attending seminary (I dropped out before finishing one semester but he got a Master of Divinity) and we got married after knowing each other for 6 months. We are quick to tell other people that we do not advise this course of action, but we celebrated our 27th anniversary this year, so I guess sometimes rash decisions work out quite nicely. So with my husband's MDiv and my undergraduate degree in religious studies, we now both work in pharmaceutical marketing research. Just what you would expect, right? I telecommute to the east coast for work each day; I'm primarily a writer/analyst. When I was in college, writing so many research papers and unable to decide what I wanted to do when I grew up, I used to jokingly say that I should find a job writing research papers. More than 20 years later, that?s basically what I do. Cool, huh? <br /><br />Our wonderful son was born when we were married just one year and a mere 15 years later our bright-eyed redhead came into our lives (okay, so she was totally bald till she was nearly 2, but she's definitely red now). My kids are my best and constant reminder that perfect timing is something determined by God and not by me, since I wouldn't have dreamed up such a family-planning scheme, and yet it works just right for us.
