- 1 (14 ounce) can coconut milk
- 3 cups chicken broth
- 1⁄2 cup uncooked rice
- 1⁄4 teaspoon red pepper flakes
- 1⁄4 teaspoon ginger
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 lime, juice of
- 2 cups cooked chicken
directions
- Mix everything except for the chicken in a saucepan. Bring to a boil and simmer about 30 minutes until rice is cooked. Add chicken and mix thoroughly.
