Mamablofish's Huevos Rancheros

- 4 corn tortillas
- 4 eggs
- 1 (16 ounce) can refried beans
- 16 ounces enchilada sauce, red or 16 ounces green enchilada sauce
- 6 ounces sharp cheddar cheese, shredded
- 2 tablespoons canola oil
- salt and pepper
directions
- Heat refried bean in covered dish in microwave for 3-4 minutes until hot, keep warm and set aside.
- In small saucepan over medium heat, warm enchilada sauce until bubbly, reduce heat and keep warm.
- In small frypan, heat 1 tablespoons oil on medium-high heat and fry corn tortillas for 45-60 seconds each, turning once until light brown and drain on paper towel.
- In same frypan, add remaining 1 tablespoons oil and fry 2 eggs at a time or all 4 if you wish, over easy or sunny side up (your preference) salt and pepper to taste.

To build your huevos rancheros:
- Place 1 or 2 tortillas on plate (we like the crunch of 2). Spread refried beans over tortillas, top with fried eggs, enchilada sauce and cheese.
- Toppings: Chopped cilantro, sliced avacado, chopped green or yellow onion, sour cream, sliced black olives, chopped red/green bell pepper, chopped green chiles, sliced limes for juice.

I live in Ocean Beach, San Diego with my husband and our 16 mo. old daughter. We have the most wonderful restaurants here but don't get out often since the little one came along. We have the best burger place called Hodads! Miss that burger! I love to cook and look forward to getting new culinary gadgets for birthdays and xmas. My husband loves his hot sauce so he challenges me quite often to spice it up. I love a healthy meal as well as indulgence once in a while. I was a vegetarian for quite a few years and even a vegan for 1 year. (not to bash vegans, but I never felt so drained.) I love meat though and my husband would have dissed me if my meat eating was non-existant. Lucky for me I was a happy steak eater years before we met! My cooking skills I cannot rate however I add my own touch to any recipe and usually create my own specialties. I eyeball my ingredients when I cook so I am slow to post recipes. I add them when I cook them and take the time to measure. I look forward to a 5 star from you!
