  • Combine sugar, corn meal, and flour. Melt the margarine and add to the sugar mixture. Cream well. Add eggs, one at a time and beat thoroughly after each. Add vinegar, vanilla, and milk. Beat thoroughly. Pour into unbaked pastry shell and bake in a 400 deg. oven for 10 minutes, reduce heat to 325 deg. and continue baking 30 to 45 minutes or until set.
  • Makes 1 (9) pie.

  1. I'd never eaten chess pie before but had heard about it. I decided that this was the perfect pie to bake for Pi Day, what with the slightly geeky name and the odd ingredients. It's a nice pie. It has the ability to sometimes taste sweet and sometimes taste sour. I found that I liked it more the second day. I can easily see this being served in the shape of a bar cookie, only with pie crust. I like the cornmeal in the recipe. That adds to the flavor and texture.

I live in the country and my husband and I are retired. We do a lot of gardening, vegetables. We just celebrated our 50th wedding anniversary 8/28, 2005. I don't really have a favorite cookbook, I like most all of them. I get a lot of recipes off the computer. I love to sew, can, monogram with my embroidery machine, cook, play with the grandchildren. I have 4, 2 boys and 2 girls.
