Mama's Pickled Onions and Cucumber

"In our house this was summer food. My childhood summers were full of BBQ with this on the table. I hate to admit it but if there were leftovers the next day I would butter some bread and put the onion and cucumbers on and eat with a smile on my face. I invite you to try my sandwich provided there are any leftovers. Mama (Carmen Jackson) didn't measure, but they were always wonderful. I am approximating in the ingredients so you may have to adjust things to suit yourself."

  • Toss the thinly sliced onions and cucumbers with the cider vinegar, sugar, salt and pepper.
  • Top with ice cubes and refrigerate.

  1. Mmm, lots like my mama used to make, too :). And like mama, I served this up with a "mess" of beans with new potatoes, some sliced tomatoes, and a huge pone of cornbread. Yum! All rhapsodizing aside, I did have some difficulty with the ice--it froze my cukes so some of them were frozen when we tried to eat. I actually let the whole dish sit out for about an hour before serving and still had to throw out ice cubes! I've seen this done with water to almost cover, and I think I'll stick with that approach. I'd also be tempted to add a touch more vinegar, but then I'm a vinegar fanatic. The red onion is a nice touch--mom didn't use one when I was a kid. This is definitely a keeper; thanks for posting! I'm finally posting recipes after years of using this site. I want to be able to access treasured recipes without lugging a ton of books south with me when I move to Lake Chapala in Mexico. Recently retired after 35 years teaching Algebra to 8th graders. I learned to cook at my mother's knee (and Julia Child expanded my vision). She was a 1st generation Swedish-American. Christmas was when we immersed outselves in the Swedish culture and food. Many of the recipes I have recently posted are from her hand-written notes and recipes. My one real regret is that she would never write down the "juice" she used to make pickled herring. Favorite cookbook? I have over 100 or so.
