Mamaw's Potato Stuff

ingredients
- 1 lb ground chuck
- 1⁄2 cup onion, chopped
- 4 cups mashed potatoes, buttered well
- 2 (14 1/2 ounce) cans green beans, drained well
- 2 tablespoons butter
- 1⁄4 cup milk
- 1 cup sharp cheddar cheese
- 2 teaspoons paprika
- salt and pepper, to taste
directions
- Brown the ground chuck and saute onions at the same time in a skillet. Drain well.
- Meanwhile, peel and roughly quarter 4-6 potatoes and boil for 20 minutes until fork tender. (I add 1 tablespoons salt to the water.) Drain, and then mash potatoes and add butter, milk, and salt & pepper to taste. Mix well.
- Also, cook the 2 cans of green beans (drained VERY WELL) in 1 tablespoons butter, over medium-low heat.
- In a 2 quart casserole dish, pour all green beans in the bottom and spread evenly. (Salt and pepper to taste.).
- Then spread prepared mashed potatoes on top, sprinkle with paprika and add the cheese.
- Then spread beef mixture on top.
- Bake, covered in a 350 degree oven for about 20-25 minutes, until heated through.

I made this for my husband for dinner tonight and he really enjoyed it. I added some garlic powder and cajun spice to the meat and, as did scimietta99, I layered the casserole differently: meat, great beans, potatoes and then cheese. DH already requested that I make this again. A keeper for sure for those busy weeknights.

Yes, we give it the 'thumbs up' - only alterion I made was to put the layers in a different order. First I did the beans, then the beef and put the potatoes on top with the cheese sprinkled over! This meant the cheese was bubbly and golden brown instead of just melted inside! The combination of ingredients were really nice - also economical and simple to make. (which is always a bonus). Thanks - this is another kid friendly recipe that will stay in my keeper file. x

This recipe has a lot of potential, but didn't wow us as written. It was pretty bland, though I did add garlic and black pepper. We've been talking about ways to adapt to our tastes -- I will try this again, with fajita or chili seasoning on the ground beef, bell peppers added, possibly add some diced bacon, and use mexicorn instead of or mixed with the green beans. We like lots of flavor!

This recipe has a lot of potential, but didn't wow us as written. It was pretty bland, though I did add garlic and black pepper. We've been talking about ways to adapt to our tastes -- I will try this again, with fajita or chili seasoning on the ground beef, bell peppers added, possibly add some diced bacon, and use mexicorn instead of or mixed with the green beans. We like lots of flavor!

I love music, especially 70's music, cats, incense & lavalights, candles, and I love to play guitar. I've been called an old "hippie chick," and I don't mind that label in the least. I also love to try other people's recipes and find ones that remind me of my Mother, and those precious memories that I had growing up in a household with such a wonderfully comforting cook...I work full-time in a real estate office as an office administrator.
I came to this site looking for recipes that were tried and true. I stayed at this site because I found people who were kind, loving, caring and shared the same interest that I do --- food and cooking. I've saved a lifetime of recipes and learned so much about cooking and ingredients that I actually feel proud of my cooking. I bet my Mom looks down on me with pride every time I cook a new recipe from RecipeZaar, and I bet my Dad cracks up every time he sees me photographing what I've cooked! My daughters have actually gotten into the act, too, and are quite versed in searching for recipes and answers here on Zaar. Makes me proud to be their Mom.
RecipeZaar isn't just a "website." It's a lifestyle. And some of the friends I've made here are LIFELONG friends to me --- and in my estimation, those types of people are a rare thing to find in this world. :)
