Mandarin Orange Salad With Peanuts

"This is a great salad that is easy to take to potlucks, but we also make it for home dinners and reduce the quantity of the ingredients; the dressing can keep in the fridge for several uses. It is a little sweet so it is also child pleasing!"

  • Tear lettuce into bite-sized pieces and combine with oranges and peanuts in a large bowl.
  • For dressing: Combine sugar, oil, mustard, slat, vinegar, onion and poppy seeds in a jar. Shake well to blend. Toss the salad with desired amount of dressing.

  1. I thoroughly enjoyed this salad. Made it twice, but halved the recipe each time. Once made it with baby romaine lettuce, and the 2nd time I used iceberg lettuce. I substituted dry roated peanuts for the salted peanuts, and instead of the canned oranges, I used the mandain oranges that come in those sealed individual bowls (Four- 4 ounce bowls to a pack). I loved the dressing, but only used... 1/3 cup granulated sugar, 3 tablespoons vegetable oil, 3 tablespoons red wine vinegar, 1/2 teaspoon dry mustard, only an 1/8 teaspoon of salt, only 1 teaspoon of the poppy seeds, but I did add 1 tablespoon of the minced onion. One other thing I wanted to mention...I think you could substitute sliced almonds or cashew halves for the peanuts. Thank-you Jan for posting this tasty, yet simple, salad recipe. I like that I can throw this salad together in a hurry, and using ingredients I have on hand in my pantry.

The combination of crisp lettuce, sweet mandarins, salty peanuts and the tart and tangy, dressing was a perfect blending of flavors. Thanks so much for sharing Jan.

I am a native Californian, born in the Los Angeles area, college in far northern California and now living in southern part of the San Francisco Bay Area. I love kids and animals. I am an active volunteer at my two teenage daughters' high school as well as a Girl Scout leader. We have two guinea pigs, one Dalmatian, one cockatiel, and one quarter-horse to keep us busy. I had a career as a marketing writer before I became a full-time mom and volunteer, but I still write all the time as well as participate in a monthly book club. I stay active and have Jazzercized for over 25 years on a regular basis. I also am trying to do some yoga now and ride horses for fun. I have loved getting involved in the RecipeZaar games and learning how to post the photos. I am currently playing on the Zaar World Tour and it is lots of fun!
