  • Whisk the mango juice, oil, lemon juice, coriander, clove powder, salt, and pepper together in the bottom of a salad bowl.
  • Add the mint, onion, tomatoes, mango, and cilantro and toss well.
  • Taste the dressing and season again with salt, and pepper, if necessary. Let the dressing sit for 5 minutes before serving.

  1. I had my doubts on how well mangoes with pare with tomatoes, but, OH MY, this salad is something special! It wasn't easy finding mango juice (and I don't have a juicer), so I bought a juice brand that included other fruits, mango being the predominant one. I will be making this again for sure and I’m so happy that mangoes these days are easy to come by here in the Northeast U.S.. So happy I made this. Can you see me doing the happy dance!   2. Oh my goodness, Lynn! This was so, so good! I didn't have cherry tomatoes, so used some little Campari tomatoes from Sam's Club and quartered them. So sweet and luscious - and they paired so very well with the mango and the dressing! Even though I was full after dinner, I polished this salad off while doing dishes. LOL! This recipe is going into my favorites - thanks for posting! Made for CQ4.

  4. This great salad was part of one of the best meals I've ever made! It was a great accompaniment to Indian Spiced Roast Chicken on a hot hot summer night. I was skeptical about the combo of mango and tomatoes and I shouldn't have been. It was terrific along with the red onion.   5. We enjoyed this delicious treat tonight served with potatoes, asparagus and jerk pork tenderloins. My oh my what a great meal. This salad was the perfect start to the meal. Quick and easy to make with excellent results. Made exactly as written and wouldn't change a thing. It was light and refreshing, tangy, spicy and wonderful. So much flavor, little bursts of coriander and cloves, and the added raw spice flavor of the cilantro and mint. Thanks for sharing another wonderful recipe my friend.
