- Make cake. Cook in 1 layer pan.
- Mix brandy and mango juice. While cake is still warm, prick the top in 1/2 inch intervals. Slowly spoon brandy mix over the cake.
- Carefully spread preserves on top of the cake.
- Arrange mango slices on top of that.
- Whip cream.
- Serve with a dollop of whipped cream on top.
- Store in fridge.
