Mango Bread

"Found in an old cookbook, it didn't fully bake in a loaf pan long after its baking time. So I use a 13x9x2" pan, cut like cake, and serve with vanilla bean ice cream. Mango juice can usually be found in the Asian food section. Make sure your mango is fresh and ripe."

  • Preheat oven to 350 degrees.
  • Grease a 13x9x2" pan.
  • In a large bowl, combine flour, sugar, cinnamon, baking soda, and salt.
  • In a medium bowl, combine vegetable oil, mango juice, eggs, vanilla, and honey.
  • Slowly add liquid ingredients to dry ingredients and mix well.
  • Stir in pureed mango.
  • Fold in diced mango and nuts.
  • Pour into pan and bake for 50-60 minutes.
  • Cut into pieces and serve warm with ice cream.
