Mango Bread

"I am posting this in response for a request on the boards for a recipe to use up some mangoes. I made this yesterday, but the original recipe had way too much sugar, so I've adjusted the recipe to the way I will make it in the future."

directions

  • Combine flour and soda, whisking together.
  • Form well in center.
  • Place well beaten eggs in well and with a spoon mix well.
  • Stir in remaining ingredients and pour into greased breadpan.
  • Bake at 350 degrees F for 1 hour.
  • Turn out onto cooling rack.
  • Cool to room temperature, then slice and serve.

  1. i had 2 very ripe mangoes which i used, and the amount of sugar 3/4c was just fine. this made a moist fruity loaf. i did use chopped walnuts but omitted the raisins. i made this in a fancy nordicware loaf pan, so it had a nice design, and sprinkled the top with some confectioners sugar. delicious dessert, thanks cindy lynn
     
  2. I can't thank you enough for posting this awesome mango bread recipe. Finally, my dream of baking my own mango bread and eating a little came true today!!! All thanks to YOU! I got around to baking this at 4 in the afternoon in my AMC Dutch Oven and it was ready by 5:10pm. I used 1 cup of sugar as one of my mangoes was not fully ripe. I did use 1/2 cup raisins and 1/4 cup black walnuts. This made a beautiful huge loaf and I shared it with my closest friends' this evening for Best Friend's Day! Nothing could be more sweet to share with the sweetest of people than this "really GOOD" bread. I wish I could give you 15 more stars! UPDATE: I took this to my family doc yday! He didn't charge me even a single $ ;) Guess you should rename this bread "Mystical Magical Mango Bread With A Secret Charm!" ;)
     
  3. I doubled the recipe to make 2 loaves. My mangoes were way past ripe, so I couldn't cut them well, so I used 3 cups of the mango pulp instead. I completely forgot to add nuts, but the bread was so yummy. I did lose a bit of the mango flavor. I don't know if it has anything to do with the ripeness of the mangoes, but next time I might add a little mango extract along with it. This is a keeper, thanks for sharing!
     
  4. I love this recipe and make it whenever I get a glut of mangoes to use up. I also add 1/2 cup shredded coconut to the mixture and sprinkle additional coconut on top before baking. It is definitely a keeper!
     
  5. Meh - this is an egg bread with some sugar and mangoes mixed in. Nothing spectacular.

  1. I doubled the recipe to make 2 loaves. My mangoes were way past ripe, so I couldn't cut them well, so I used 3 cups of the mango pulp instead. I completely forgot to add nuts, but the bread was so yummy. I did lose a bit of the mango flavor.   2. I don't have a bread pan so I baked this in a 13x9 inch pan and adjusted the cooking time to 30 minutes. I also replaced the nuts with raisins. It's so moist and yummy. Next time I'll try to add more mangoes.

I am currently a stay at home Mom and wife (aka: homemaker, domestic engineer, chauffeur, etc.). My husband and I made this choice about 2 1/2 years ago. At the time I was averaging 72 hours/week +. Our kids were complaining that they never saw me, and one of them was even getting in trouble (too little supervision apparently). We got the troubled teen through high school, and she is currently preparing for college. Things have improved a lot so I am considering going back to work part-time while the kids are gone to school (if the right opportunity presents itself). <br> <br>I love to cook, especially trying new recipes. I get tired of the same ol', same ol'. I also love reading cookbooks and the history of recipes. I always hated doing all the dishes afterwards, so I did a lot of one dish meals whenever possible. Recently, my husband bought me a new dishwasher, so now I am cooking up a storm! Everyone is loving it. <br> <br>I look forward to making new friends in Recipezaar, trying out new recipes, and hope some of you will try some of mine. Please, if you try my recipes, take time to post a little note telling me about your experience and any modifications you may have made. I just love to experiment and try new things in the kitchen! :-))
