  • Peel mangoes.
  • Cut flesh into strips.
  • finely chop OR pound garlic.
  • Peel & finely cut ginger.
  • Scrape tamarind & discard seeds ( if using fresh).
  • Mix all solid ingredients.
  • Boil vinegar.
  • Pour over the mixture & stir well.
  • When cool bottle & lable.
