  • In a blender, whirl mango chunks, coconut milk, sugar and lime juice until smooth. Add additional sugar to taste.
  • Freeze until firm.

  1. Yummy, healthy and very refreshing on this very hot day we had today. I had some extra strawberries that needed using up as well so added those in. DS8 & I especially enjoyed them, unfortunately ds10 likes things sweeter so I'll try it again with just the mangoes next time since they are a nice sweet fruit. I definitely need better popsicle molds though, ours are far too small and we "had" to have two ;). Thanks for posting KimmieCat!
