- Peel mangos; cut into slices. keep fruit from one mango separate.
- Squeeze juice of both limes into blender (about 1/3 cup).
- Add fruit of one mango, salt. pepper and oil. Process until smooth, set aside.
- Heat pecans in small saute pan until warm, golden and fragrant.
- Place spinach greens on serving plates, arrange remaining mango slices on top. Sprinkle with pecans, drizzle with dressing and serve.
