  • 2 cups mangoes, diced
  • 14 cup chinese black preserved beans, rinsed
  • 14 cup green onion, thinly sliced on the bias
  • 14 cup red onion, diced
  • 2 tablespoons ginger, grated
  • 2 jalapeno peppers, red sliced in thin circles no seeds
  • 1 red pepper, diced
  • 12 cup oregano, fresh chopped
  • 1 teaspoon lime zest
  • 1 teaspoon orange zest
  • 2 tablespoons lime juice
  • 3 tablespoons orange juice
  • 14 cup rice wine vinegar
  • 1 cup olive oil
  • 1 tablespoon cumin seed, toasted
